Chili Lime Shrimp Bowl

Ingredients
  

  • 2 cups Cauliflower
  • 1 tbsp Olive Oil
  • 1 cup Shrimp
  • 1 Zucchini diced
  • 1 Bell Peppers chopped
  • 2 slices Purple Cabbage

Chili Lime Sauce

  • 2 tbsp Greek Yogurt
  • 1/2 tsp Lime
  • 1/4 tsp Chili Powder
  • 1/8 tsp Salt
  • 1/8 tsp Black Pepper
  • 1/4 tsp Lime

Instructions
 

  • Preheat oven to 400°F.
  • Chop vegetables
  • Add the shrimp, peppers, cauliflower, red cabbage and zucchini to the oven. Cook until desired doneness.
  • While everything is cooking, mix up the chili lime sauce. Add the yogurt to a mixing bowl along with the lime juice, chili powder, salt, pepper, and lime zest.
  • Add the cooked cauliflower to the bottom of a bowl and start building your power bowl by adding on the 1/2 cup of grilled shrimp, peppers, zucchini and cabbage to each bowl. Top with the chili lime sauce and enjoy
